Blueberries team up fantastically with lemon – try this Berry Good Blueberry and Lemon Honey Drizzle Cake to experience this fantastic combination.

Cake Honey Drizzle
125g melted butter 2Tbs honey
¼ cup honey 2Tbs sugar
½ cup white sugar Zest of one or two lemons
Zest of 2 lemons ½ cup lemon juice
3 eggs  
½ cup sour cream  
1 cup self raising flour  
1 cup fresh or frozen blueberries  

 In food processor mix the butter, honey, sugar and lemon rind until smooth and creamy. Add the eggs and sour cream process briefly. Add the self raising flour, pulse just until the mixture is smooth and lump free. Add the blueberries and gently mix through. Spoon into a well greased ring tin. Fan Bake at 160°C or until golden and springy to the touch.

Honey Drizzle: Cool for 5 minutes in the tin before turning out onto a serving platter. Heat together all the honey drizzle ingredients until the sugar is well dissolved. Pour the honey drizzle mixture over the cake while it is still warm.Enjoy
