Blueberry Concentrate

1 1/2 Cups Water

2 Cups Blueberries (fresh or frozen)

3/4 Cup Sugar

A thin strip of Lemon zest.

Cook the above in a small pot until the berries have fully broken down and all of the sugar has disolved.  Smoosh the berries with a fork or masher to really crush them.  Strain the syrup through a sive.  The Blueberry concentrate will keep in the fridge for a couple of weeks.  

Add the concentrate to plain yoghurt or ice-cream to make a delicious treat, or add a little to lemonade for a fun natural colour.  It can be mixed with water as a refreshing drink.
